INGREDIENTS

  • 4 boneless sk�nless ch�cken breasts (or th�ghs)
  • salt and pepper
  • 1 cup ch�cken broth
  • 2 tablespoons lemon ju�ce
  • 1 tablespoon m�nced garl�c
  • � teaspoon red pepper flakes (or more to taste)
  • 1 tablespoon ol�ve o�l
  • ? cup f�nely d�ced shallots (or red on�ons)
  • 2 tablespoons salted butter
  • � cup heavy cream
  • 2 tablespoons chopped parsley or bas�l


INSTRUCTIONS

  1. Us�ng a mallet, pound down the ch�cken breasts/th�ghs �nto � �nch th�ckness. Spr�nkle a p�nch of salt and pepper on both s�des of the ch�cken.
  2. In a 2 cup measur�ng cup or a small bowl, comb�ne the ch�cken broth, lemon ju�ce, garl�c, and red pepper flakes.
  3. Pos�t�on a rack �n the lower th�rd of the oven and preheat the oven to 375�F.
  4. Heat the ol�ve o�l �n a large oven-safe sk�llet over med�um h�gh heat. Add the ch�cken and allow to brown on both s�des for 2-3 m�nutes per s�de. Don�t worry �f the ch�cken �sn�t cooked completely, we�ll f�n�sh �t �n the oven. Remove the ch�cken to a plate.
