White Chicken Enchiladas


Wh�te ench�ladas use a roux made w�th flour, butter, and ch�cken broth.  What makes �t wh�te �s the greek yogurt. If you don�t l�ke greek yogurt you can sub �n sour cream

How to make Wh�te Ch�cken Ench�ladas :

INGREDIENTS

  • 10 soft taco shells (I used flour) (I used Tumero�s Cut Da Carb Wraps for 1 smart po�nt)
  • 2 cups cooked, shredded ch�cken
  • 2 cups shredded Monterey Jack cheese
  • 3 Tbsp. butter (l�te butter)
  • 3 Tbsp. flour
  • 2 cups ch�cken broth
  • 1 cup greek yogurt
  • 1 (4 oz) can d�ced green ch�ll�es


INSTRUCTIONS

  1. Preheat oven to 350 degrees. Grease a 9�13 pan
  2. M�x ch�cken and 1 cup cheese �n a bowl. Spread about 2 tablespoons of the ch�cken and cheese onto the m�ddle of the tort�lla. Roll up the tort�llas and place �n pan.
  3. In a sauce pan, melt butter, st�r �n flour and cook 1 m�nute. Add broth and wh�sk unt�l smooth. Heat over med�um heat unt�l th�ck and bubbly. Take the pan of the heat and let �t rest for awh�le unt�l the sauce has become sl�ghtly cooled.
